I ordered the pork bone soup, a single dish that is only sold 200 servings per day. Okdong-style pork bone soup is seasoned with just salt, making the broth exceptionally clean and flavorful. It comes with an abundance of thinly sliced pork, resembling ham. Itโs a well-balanced, lean pork bone soup that knows when to add and when to subtract.
It was better to enjoy the soup in its natural state without adding any seasoning. The rice is served scorched from cold, allowing it to remain tender until the end. This place uses Berkshire K pigs, which are not prolific and grow slowly, resulting in higher prices and a distinctly savory taste.
I visited โOkdong style,โ a place that serves only one type of food, โa place to dine together.โ The chefโs name is also the same as the restaurantโs. Okdong style has incorporated the chefโs experience from various dining industries, including embassies, into the food. Following the chefโs goal of offering good ingredients at reasonable prices, it has been selected for the Michelin Guide Bib Gourmand for five consecutive years. Recently, it even expanded to New York, USA.
